Vietnamese fresh spring rolls (also known as Goi Cuon) is a Vietnamese traditional dish. The Vietnamese food consists of shrimp, pork, vegetables, herbs, rice vermicelli (Bún). All of them are wrapped in a rice paper (Banh Trang). Ingredients for Spring rolls
• 453-gram shrimps
• 453-gram pork leg
• Some Chinese Chives (Hẹ)
• Some peppermint leaves
• 2 tablespoons of grated carrots
• Some Vietnamese Balm (Kinh Giới)
• 1 pack rice paper (known as Banh Trang)
• 1/2 pack rice vermicelli (Bún)
• 1/2 teaspoon of salt
• 1/2 teaspoon of sugar
• ½ teaspoon of ground black pepper (optional)
• 1 cup of water
Directions:
Step 1:

Cook the pork: Prepare a pot of water (about 1 liter), add 1 teaspoon of salt, 3-4 slices of ginger, a teaspoon of vinegar or alcohol, 3-4 slices of onion. Then let the pork in and boil it about 15-20 minutes. A perfect boiled pork will be no longer pink areas in its middle. Dip the pork into a bowl of cold water for 5 minutes. Slice it as thin as possible to roll easier.

Cook the shrimp: prepare a pot of water with the same spices and ingredients when cooking the pork. Then add the shrimps in and boil it for 3-5 minutes. Their shells and tails are removed before wrapping.
Cook the carrot: prepare a pot of boiling water. Then let 2 teaspoons of grated carrots into. Get them out of the pot quickly and put into a bowl of cold water for 5 minutes.

Lay each rice paper on a clean cutting board
Soften it with a little water to make sure it not break

At the bottom of the rice paper is a beautiful lettuce, then about 2-3 peppermint leaves, a few grated carrot, a few rice vermicelli, 2-3 slices of pork and a shrimp. A few Chinese Chives will be placed in the top.

Start to roll it now. Fold its sides inward and then roll the rice paper tightly. Repeat with others.

How To Make Dipping Sauce
Ingredients:

• 2 teaspoons of minced garlic
• 8 tablespoons of fish sauce or soya bean sauce (for vegans)
• 2-3 tablespoons of water
• 2-3 slices of red pepper
• 1-2 teaspoons of lemon juice

Mix all ingredients in a small bowl to have a dipping sauce for Vietnamese spring rolls.
