In 2012, Vermicelli and sour crab soup was on the list of Asian most attractive dishes, voted by CNN. The dish is one of the traditional food in Vietnam and well-known nationally as well as internationally. It has a light sour taste and very appropriate to eat in summer.
Besides the sour taste, the dish also tastes very sweet. However, it is the sweetness of all the vegetables that the cooks use to make the food. Similar to other types of soup original in Northern Vietnam, Vermicelli and sour crab soup comprises ground field crabs. The difference is the dish has tomatoes or tamarind to increase the sour flavor.
Therefore, people who eat it will be able to feel not only the sweetness of ground crab but also the sour taste of the broth. The most regrettable thing is that when being imported into many regions, the dish has a lot of variations. And that makes this type of soup lose its own exclusiveness.
Hence, when you try or want to make the food, remember that it has 11 main ingredients. They are field crabs, red cashews, noodle, water morning glory, shrimp paste, lemon, chili pepper, garlic, pepper, salt, and sugar. Apart from water morning glory, you can use other veggies, such as water dropwort or mustard greens.
Finally, after you have done the cooking, enjoy the dish with shrimp paste and some lettuce. The taste will be complete.
